Chewy Chocolate Chip Granola Bars
The past few months of being stuck at home have consisted of a lot of baking not so healthy desserts. I realized I was in need of something to curb my sweet tooth, without all the guilt, so that is where healthy homemade granola bars came into the picture. Many of the store-bought granola bars that I love so much, have added sweeteners that aren’t good for you. Making granola bars in your own kitchen means you get to determine what goes into your granola bars and giving you the ability to substitute better ingredients. These granola bars come together so quick, but waiting for them to firm up in the fridge takes some patience. We are on our third batch in the past few weeks, so be ready to make them again and again!

Chewy Chocolate Chip Granola Bars
These chewy chocolate chip granola bars are made with better ingredients and are so easy to make!

Ingredients
- 1 cup peanut butter
- 1/2 cup honey
- 2 tablespoons coconut oil
- 2 cups old fashioned oats
- 1 cup of nuts (I like to do half almonds, half cashews, roughly chopped)
- 1/2 cup mini chocolate chips
- 2 tablespoons chia seeds
- 2 tablespoons flax seeds
- 1/2 teaspoon salt
Instructions
- Melt peanut butter, honey, and coconut oil in a saucepan over medium heat. Bring to a simmer, remove from heat.
- Mix in oats, nuts, chia seeds, flax seeds, and salt.
- Refrigerate for 30 minutes, or until the mixture comes to room temperature then add the chocolate chips.
- Evenly spread in an 8x11.5 inch baking dish lined with parchment or wax paper for easy removal. Press down firmly with the back of a measuring cup.
- Refrigerate for at least 4 hours or overnight. Remove by pulling out the parchment paper and transfer it to a cutting board. Cut into rectangle-shaped bars.
